Gypsum adds permanent hardness to soft brewing water. If you use distilled water this is a good choice to give it some hardness. May also be used to lower the pH of water. Also known as calcium sulfate.
Use 1-2 teaspoons per 5 gallons. 1 gram of gypsum adds 62 ppm of calcium and 147 ppm of sulfate.
